Mediterranean Quinoa

A delicious and healthy recipe for our Thyme Olive Oil.  Gluten free!

  • chopped green onions
  • chopped cucumber
  • half of a red pepper, minced
  • chopped flat parsley
  • minced garlic
  • 4 tablespoons of Thyme Olive Oil
  • juice of 1 ½ lemons
  • 2 cups of prepared quinoa

Mix well, then add:

  • 1 cup of halved, sweet cherub tomatoes
  • crumbled feta
